One of my all-time favorite dishes is Authentic Thai Pineapple Fried Rice. It's a perfect balance of savory and sweet, with the aroma of curry adding an irresistible depth of flavor. I typically use a range of ingredients from my kitchen for this recipe, including fresh pineapple, pork, Chinese sausage, raisins, cashew nuts, eggs, fish sauce, soy sauce, curry powder, spring onions, and leftover chilled rice.

Together, these ingredients create a unique and tasty Thai Fried Rice that sets it apart from others. The combination of curry powder and fish sauce, the crunchy texture of the cashews and raisins, the sweetness of the pineapple, and the presentation in a pineapple bowl make this dish a true standout.

  • 4 cloves garlic, minced
  • 2 tablespoon curry powder
  • 3 tablespoon oyster sauce
  • 2 tablespoon soy sauce
  • 2 tablespoon fish sauce
  • 1 tablespoon black soy sauce (optional for more appealing and appetizing rice)
  • 2 tablespoon sugar
  • Spring onion

Tips #1: Use chilled leftover rice to prevent rice from getting soggy.
