Marinate the squid with salt and pepper, rubbing and mixing them well. Add the crispy flour and coat the squid pieces with this mixture of salt and pepper. Allow them to sit at room temperature for about 10-15 minutes.

While you wait for the squid, you can prepare minced garlic using a food processor.

In a small pan, fry the garlic. Heat ¼ cup of cooking oil over medium-high heat. Add the minced garlic and stir continuously until it becomes fragrant and turns slightly golden. Once you achieve this, remove the pan from the heat.

Use the same pan and oil to fry the squid. When the oil reaches a high temperature, start adding the squid pieces one by one to prevent them from sticking together. Let them fry until they turn golden brown, which should take about 5 minutes. Remove the fried squid, drain off excess oil, and allow them to cool down while the flour becomes crispy for about 10 minutes.

In the same pan, set the heat to low. Add the oyster sauce, soy sauce, sugar, and water. Mix them well, then remove from the heat.
