Although Pad Thai is one of the most well-known Thai noodle dishes, there are many other Thai noodle dishes that are just as delicious if not more so. One of my favorite street food noodle dishes in Thailand is Pad See Ew, also known as Thai Stir-Fried Noodles.

It's easy to make at home and requires only 4 main ingredients, plus a savory soy sauce. The secret to making an authentic Pad See Ew is using the right sauce and noodles. Sen Yai, which are wide and flat fresh rice noodles, are often used to make Pad See Ew rather than the thin, dry noodles used in Pad Thai. The sauce for Pad See Ew is also characterized by its caramelization with the noodles and soy sauce, while the sauce for Pad Thai has a sweet, sour, and savory blend of flavors.

In addition to noodles, this Thai dish often includes pork or chicken as the main protein and Gai-Lan or Chinese broccoli as a key authentic ingredient (though broccoli can be used as a substitute).

Tips: You can customize the ingredients to your preference.

  • 5 tablespoon oyster sauce
  • 4 tablespoon soy sauce
  • 2 tablespoon dark soy sauce
  • 1 tablespoon sugar
