Thai Style Grilled Pork Skewers Recipe (Moo-Yang)

Moo Ping, or Thai grilled skewers, is a popular street food in Thailand that can be found just about anywhere, from street vendors and morning markets to gourmet street food in supermarkets. It's a beloved dish that is often eaten for breakfast and enjoyed with Khao Naew, or sticky rice.

I have fond memories of my mom buying Moo Ping for me to eat before school at the morning market. It was always easy to eat and delicious, making it one of my favorite Thai street foods.

Moo Ping is made with sliced shoulder pork, which is a particularly tasty and soft part of the animal. However, if you can't find pork shoulder, you can also use other cuts such as pork tenderloin or pork belly. The pork is marinated in a mixture of savory and sweet ingredients, including soy sauce, salt, fish sauce, coconut palm sugar, garlic, pepper, and cilantro root, to create a well-balanced and aromatic flavor. And for an extra burst of flavor, it's highly recommended to eat Moo Ping with Nam Jim Jaew or Nam Jim Seafood and Khao Naew.

To make this recipe, you are going to need:

  • 1 KG. pork shoulder
  • 1/4 Cup Cilantro leave and root (minced)
  • 2 Garlic cloves
  • 1 Tbs. Soy sauce
  • 1 Tbs. Oyster sauce
  • 1 Tsp. Salt
  • 1Tsp. Ground white pepper
  • 1/2 Cup Coconut milk
  • 1 Tbs. Fish sauce
  • 1 Tbs. coconut palm sugar

Here is a step-by-step guide on how to make Thai Style Grilled Pork Skewers ( Moo-Yang):

1 In a small bowl, combine clove garlic, cilantro leaves and root, fish sauce, soy sauce, oyster sauce, salt palm sugar ground white pepper, and coconut milk.

2 Sliced pork in bite-size pieces about 2 inches long and 1 inch wide.

3 Combine pork and marinated in a large bowl, mix well, cover with plastic wrap and refrigerate overnight or in rush hour for at least 2 hours.

4 Skewer the pork, push the meat tightly and make sure the meat is tightly bunched together. Leaving the skewers about 2 inches at the bottom for the handle.

5 Slowly grill the skewers over charcoal for 15-20 minutes. For me, I’m living in an apartment so I can not grill with charcoal. I used an air fryer instead. So you cook the pork skewer in the air fryer for 10 minutes, set the air fryer 200 degrees for the first 5 minutes, and then flipping them over after 5 minutes.

6 Serve with large balls of sticky rice and Nam Jim.
