Authentic Thai Braised Chicken Noodle Soup (Guay Tiew Gai Toon) Recipe

Thai braised chicken noodle soup is one of the most popular street foods here in Thailand, and among my favorites. It is similar to Chinese braised soup made with Chinese herb spices, but in Thailand, we added our own little twists and served it with soft rice noodles.

In the bustling world of Thai street food, every little stall has its own secret recipe for this dish, often passed down from generation to generation and our take on the dish is also no different.

Picture this: Chinese herb spices, cinnamon sticks, star anise, coriander roots, fresh garlic, palm sugar, soy sauce, pepper, and radish, all mixed together in one big delicious noodle bowl. And don't forget the finishing touch - blanched greens and crispy garlic on top.

Just thinking about it makes my mouth water! Seriously, once you taste the sweet, salty, and savory of the noodle, you are going to fall in love with them immediately!

Thai braised chicken noodle soup can be made with various types of noodles such as flat rice noodles, egg noodles, glass noodles, or even instant noodles. Regardless of the noodle type you choose, this recipe promises a satisfying dish, perfect for lunch or dinner.

To make this recipe, you are going to need:

  • 3-4 radish, bite-sized
  • 2.5-litre water
  • 4 tbsp soy sauce
  • 4 tbsp sweet soy sauce
  • ½ tbsp salt
  • 1 tbsp palm sugar
  • 1 tbsp ground pepper
  • 2 garlic bulbs
  • 3 cinnamon sticks
  • 10-star anise
  • 4-5 coriander roots
  • 1 minced garlic bulb, topping
  • Chopped spring onion and coriander, topping
  • Fresh vegetables such as sliced cabbage, and mixed lettuce.

2 Place a soup pot over medium-high heat. Add the chicken, chopped radish, cinnamon sticks, garlic, coriander roots, star anise, palm sugar, sweet soy sauce, soy sauce, salt, and ground pepper..

3 Pour the water into the pot, cover it with a lid, and let it simmer for about 30 minutes.

4 Next, using a small pan, heat ½ cup of cooking oil over medium-high heat. Add the minced garlic and keep stirring until it becomes fragrant and slightly yellow in color. Once done, remove the pan from the heat.

6 Bring a small pot of water to a boil to cook your noodles. Drop the noodles into the pot and follow the instructions from the package. If there are no instructions, simply drop the dry noodles and wait about 2-3 minutes until they are soft. Drain the water and transfer the noodles into a bowl.

7 Place the noodles into the bottom of the bowl. Pour the soup over them, and top with chicken, radishes, vegetables, spring onion, and fried garlic. Then, you can adjust the taste to your liking by adding sugar and chili flakes as much as you like. Enjoy!
