Authentic Thai Braised Chicken Noodle Soup (Guay Tiew Gai Toon) Recipe

Ingredients you need:

  • 500 g. Any part of the chicken, bone-in
  • 3-4 radish, bite-sized
  • 2.5-litre water
  • 4 tbsp soy sauce
  • 4 tbsp sweet soy sauce
  • ½ tbsp salt
  • 1 tbsp palm sugar
  • 1 tbsp ground pepper
  • 2 garlic bulbs
  • 3 cinnamon sticks
  • 10-star anise
  • 4-5 coriander roots
  • 1 minced garlic bulb, topping
  • Chopped spring onion and coriander, topping
  • Fresh vegetables such as sliced cabbage, and mixed lettuce.

Start by gathering all the necessary ingredients for the braised chicken soup.

Place a soup pot over medium-high heat. Add the chicken, chopped radish, cinnamon sticks, garlic, coriander roots, star anise, palm sugar, sweet soy sauce, soy sauce, salt, and ground pepper..

Pour the water into the pot, cover it with a lid, and let it simmer for about 30 minutes.

Next, using a small pan, heat ½ cup of cooking oil over medium-high heat. Add the minced garlic and keep stirring until it becomes fragrant and slightly yellow in color. Once done, remove the pan from the heat.

After 30 minutes, check your braised chicken. If it’s ready, reduce the heat to low. Cover the pot and keep it hot until ready to use.

Bring a small pot of water to a boil to cook your noodles. Drop the noodles into the pot and follow the instructions from the package. If there are no instructions, simply drop the dry noodles and wait about 2-3 minutes until they are soft. Drain the water and transfer the noodles into a bowl.

Place the noodles into the bottom of the bowl. Pour the soup over them, and top with chicken, radishes, vegetables, spring onion, and fried garlic. Then, you can adjust the taste to your liking by adding sugar and chili flakes as much as you like. Enjoy!
