Authentic Thai Pineapple Fried Rice Recipe

Ingredients you need:

  • Half of pineapple
  • 3 Cups chilled leftover rice
  • 100 g. Pork ( cut into bite-size) / or ( any protein you like such as chicken, shrimp )
  • 3 Eggs
  • 50 g. raisin
  • 50 g. Roasted cashew nut
  • 4 cloves garlic, minced
  • 2 tablespoon curry powder
  • 3 tablespoon oyster sauce
  • 2 tablespoon soy sauce
  • 2 tablespoon fish sauce
  • 1 tablespoon black soy sauce ( optional ; to make the rice look more appealing and appetizing)
  • 2 tablespoon sugar
  • Spring onion

To prepare a pineapple, start by cutting it in half with a sharp knife. Then, carefully slice around the perimeter of the fruit, removing the skin. Make a horizontal cut along either side of the core, and use a spoon to scoop out the cubed fruit. Place the diced pineapple in a bowl for later use.

To start, heat a wok or large non-stick frying pan over medium-high heat. Add cooking oil and minced garlic to the pan. Cook for about 1 minute, or until the garlic is browned and fragrant.

Next, add the pork to the pan and stir until it is fully cooked. Once the pork is cooked, set it aside in the pan.

Add some eggs and stir frequently until they are scrambled and lightly cooked.

Add some chilled leftover rice and continue to stir.

Add Chinese sausages, cashew nuts, and raisins on top.
