  • 1 tablespoon fish sauce
  • 2 tablespoon red curry
  • 2 tablespoons sliced red onion or shallot
  • 1 tablespoon shredded kaffir lime
  • 1-2 tablespoons chili pepper

Start by gathering all the necessary ingredients for the Thai spicy shrimp omelet pancake.

Combine eggs with fish sauce, red curry, and coconut milk, then beat with a fork until frothy.

Add the red onion, kaffir lime leaves, and chili pepper to the eggs, and mix them well.

Heat 1 tablespoon of cooking oil in a pan over medium-high heat. Sear the shrimp until they are about 80% cooked, then season with salt and pepper to taste.

Pour the egg mixture over the shrimp in the pan and fry for about 1 minute. Then cover with a lid and cook for about 5 minutes.

Keep checking the egg. If there is still liquid on top, use a spatula to gently lift the edges of the egg and let the liquid flow to the bottom. Allow it to set fully.
