Khao Kai Jeaw or Thai-style fried omelet is probably one of the most basic Thai dishes out there. It is basically a comfort food for us locals because of how easy it is to make and its unique taste and texture.
For this recipe, we're going to spice things up and transform this basic traditional dish into an awesome and delicious side dish that you can easily make at home. Let me introduce you to my personal recipe for Thai spicy shrimp omelet pancakes, taking the basic omelet to the next level with a touch of Thainess.
This recipe can be done in 25 minutes and is made from eggs, red curry, fish sauce, coconut milk, red onion, chili pepper, and kaffir lime leaves. For protein, I use shrimp, but you have the flexibility to include whichever protein you prefer, such as squid, other seafood, chicken, or even mushrooms.
Here's a little secret that makes Thai omelets so unique and delicious: use a non-stick or Teflon frying pan to prevent the eggs from sticking.
After you are done, you can pair the dish with steamed jasmine rice, which makes for a great meal for lunch or dinner. Be sure to give this recipe a try!
