It’s hard to describe in words just how much I love the grilled pork neck we have here, in Thailand. From its aroma to its rich texture, my mouth is watering, just thinking about it.

This dish is often associated with the Isaan region in the northeast of Thailand, as it is believed to have originated there. The dish is best known for its blend of fat and lean meat, creating an amazing meat dish that feels like it is melting in your mouth. There’s nothing quite like it.

Thai-style Kor Moo Yang is often marinated with a mixture of savory and sweet ingredients, including soy sauce, coconut palm sugar, and garlic, to create a well-balanced flavor.

To spice it up even more, I highly recommend serving Kor Moo Yang with sticky rice and Thai chili sauce (Nam Jim Jaew). The sauce is easy to make (follow our recipe here) and adds a ton of flavor to an already delicious grilled pork neck dish.

According to the original recipe, Kor Moo Yang is often cooked on a charcoal grill, which is not easy to come by at most people’s homes, so I’ve decided to adapt the original recipe using an Air Fryer instead, and the result was incredible.   • 5 garlic cloves, finely minced
  • 2 tablespoons coconut palm sugar
  • 2 tablespoons oyster sauce
  • 2 tablespoons grounded pepper

2 Marinate the pork neck in a large bowl with oyster sauce, coconut palm sugar, ground pepper, and minced garlic. Mix well, cover with plastic wrap, and refrigerate overnight for best results. If you're short on time, marinate for at least 20 minutes.

3 Set the air fryer to about 180°C (356°F) and place the marinated pork neck inside for the first 10 minutes.
