Tom Yum noodles — or as we call it in Thai, Guay Tiew Tom Yum — is one of those dishes that instantly brings me right back home. It’s a classic comfort food you’ll find on nearly every street corner in Thailand, often served 24 hours a day. Whether it’s a late-night meal or a quick lunch, you can always count on it to be delicious, full of flavors, and satisfyingly filling.
In Thailand, noodle soups usually come in two main types: a clear broth that’s despite its look, it can packed quite a surprisingly rich flavor, and the iconic Tom Yum broth — spicy, sour, which is what we will be focusing on making today.
If you're short on time or traveling in Thailand, you can grab an instant version called Mama or YumYum from just about any 7-Eleven — it’s fast, cheap, and honestly pretty tasty. That said, if you prefer a healthier option, you can do it at home by following my recipe.
All you need are fresh or egg noodles, minced pork, a good chicken or pork broth, sugar, chili powder, crushed peanuts, fish sauce, and a squeeze of fresh lime juice to bring out that signature Tom Yum flavor. I like to top it with crispy fried garlic and chopped coriander for extra aroma and crunch.

To make this recipe, you are going to need:

- 2 teaspoons chilli powder
- 2 teaspoons sugar
- 2 teaspoons fish sauce
- 3 teaspoons fresh lime juice
- Fresh noodles or egg noodles
- Crispy minced garlic and chopped coriander to garnish
Here is a step-by-step guide on how to make 10-Minute Quick & Fresh Tom Yum Noodles Recipe
1 Start by gathering all the essential ingredients for your Tom Yum noodles.
2 Place a soup pot over medium-high heat. Pour in 2 cups of broth and bring it to a boil.
3 Place the minced pork in a bowl, then pour the boiling soup over it. Use a spoon to gently break the pork apart so it doesn’t clump together. Once done, pour everything back into the pot of boiling soup.
4 Continue boiling the pork until it’s fully cooked. Skim off any foam that rises to the surface to keep the broth clear.
5 Add the crushed peanuts, fish sauce, and chili powder to the pot, then stir well to combine.
6 Remove the pot from the heat and stir in the fresh lime juice.
7 Place another pot over medium-high heat and fill it halfway with water. Once the water comes to a boil, add the noodles and blanch them until tender.
8 Once the noodles are ready, transfer them to a bowl and pour the hot Tom Yum soup over the top. Don’t forget to garnish with crispy fried garlic and fresh coriander. Serve hot—and enjoy!
