Pad See Ew, or Thai stir-fried soy sauce noodles, is one of the most popular dishes in Thailand. If you've ever been to Thailand, you'd know that this dish can be ordered at pretty much any mom-and-pop restaurant you find on the streets of Bangkok.

 

This dish has been a staple in Thai cuisine for a long time and has been influenced by Chinese immigrants who came to Thailand centuries ago. On this blog, we’ve shared a Pad See Ew recipe before using flat fresh rice noodles (known in Thai as Sen Yai), but for this one, we are going to make it with rice vermicelli, another popular noodle option among Thais.

This recipe is perfect for beginners, especially if you’ve never cooked Thai food before. You won’t need to spend an hour in the kitchen, as it can be done in less than half an hour. The best part? It only uses four main ingredients, plus soy sauces. Easy-peasy!

Start by preparing the ingredients: protein, noodles, eggs, and gai lan (Chinese broccoli). For the protein, you can use any meat you like—pork, beef, chicken, or tofu. For the noodles, you can use rice vermicelli or substitute them with any type of noodles you prefer. All of these ingredients can be found at your nearest Asian supermarket.

2 Set a pan over medium-high heat. Add 2 teaspoons of cooking oil and wait until the pan is hot. Toss the pork into the pan and stir. Cook until the meat mostly changes from pink to white.
