Today’s recipe is something simple, comforting, and easy on the stomach.

For my wings soup, I keep it very simple. I use chicken wings, white radish, a soy-based sauce, garlic, ground pepper, and chicken stock as the base. Then I add glass noodles to make it more filling and complete, and top the soup with fried garlic and fresh coriander for a light, refreshing aroma. To bring everything together, I like to add fresh chili and a squeeze of lime. It gives the soup a little kick and brightness that really lifts the flavor.

To make this recipe, you are going to need:
- 500 g. Chicken wings
- 1 white radish
- 100 g. Coriander and onion spring, roots for soup, and finely chopped for garnish
- 6 clove garlics, minced
- 6 clove garlics, crushed
- 300 g. Glass noodle
- 1 cube chicken stock
- 2 tablespoons mushroom sauce
- 2 tablespoons soy sauce
- 2 tablespoons ground white pepper
- 1 tablespoon salt
- 5 tablespoons cooking oil
- 2 litre of drinking water
Here is a step-by-step guide on how to make Thai Chicken Wing Soup with Glass Noodles
1 Start by gathering all the essential ingredients you’ll need to make chicken wing soup with glass noodles.

2 In a medium pot over medium-high heat, add 2 liters of water along with crushed garlic, coriander, and onion roots. Heat until the water becomes boiling hot.

3 Cut the white radish into small pieces, then add it to the pot and cook for about 10 minutes. After that, add the chicken wings, chicken stock cube, salt, and ground white pepper.

4 While the soup is cooking, skim off any brown foam that rises to the surface. Add mushroom sauce and soy sauce. Then continue simmering for about 30 minutes.

5 While the soup is cooking, you can prepare the fried garlic. Heat a small pan over medium-low heat, add some oil, then add the minced garlic. Stir gently until it turns light golden brown, then remove it from the heat.

6 Prepare your condiments: finely chop the coriander and spring onion, slice the fresh chili, and cut the lime into wedges for squeezing.

7 Once the soup is done, adjust the seasoning to taste. Add the glass noodles and cook for 3 minutes until just tender. Avoid adding too many, as leftover noodles will swell and soak up the soup.

8 Check that the glass noodles are cooked through, then serve and enjoy!
