Quick Mixed Stir-Fried Vegetable Noodles

1  10 mins medium

Sometimes the best meals come from simply opening the fridge and using whatever’s left. I always do this on my lazy days.

Today, I found myself with lots of vegetables in small portions, not quite enough on their own. So instead of letting them sit there, I tossed everything together and turned them into a quick stir-fried noodle dish.

It’s nothing fancy, but honestly, that’s what makes it so good: simple, quick, and delicious. You can have it ready in less than 10 minutes.

You can use any vegetables you have on hand, such as broccoli, cabbage, kailan, bok choy, carrots, mushrooms, or anything you like. Just stir-fry them in a hot wok to keep that nice crunch, then add egg noodles and a savory soy-based sauce. I also like to throw in a bit of mushroom sauce, a touch of sugar, and some chopped garlic for extra aroma.

That’s it. No complicated steps, no long prep.

What I love most is that when you cook it yourself, you’re in control. You decide how crunchy your vegetables should be, how much sauce to add, and exactly what goes into your dish. Plus, it’s quick to clean up too, just one pan, one cutting board, and a knife.

All the sauces are easy to find at any Asian supermarket, and if you love Asian food, you probably already have them at home.

Give it a try tonight. Fresh, simple, and made just the way you like it.
