Stir-fried okra with eggs is one of my favorite recipes to make as it is one of the easiest recipes to follow, taking only 15 minutes to cook, and it is both delicious and nutritious at the same time.
The okra, also known as lady’s finger, is considered a superfood, rich in minerals, vitamins, antioxidants, and fiber, which is one of the reasons why I love this dish so much. When okra is cooked quickly, it retains a slightly thick and crunchy feel, which gives it a pretty unique texture. Combine this with a little bit of Thai spice and stir-fry it and you get one delicious dish you can eat with rice for lunch/dinner.
All you have to do is slice the okra and pair it with eggs, then stir-fry with garlic, oyster sauce, soy sauce, and a pinch of sugar to create a tasty dish rich in flavors while retaining its health benefits.

To make this recipe, you are going to need:

Here is a step-by-step guide on how to make Thai Stir-fried Okra with Eggs and Mushroom Sauce Recipe
1 Begin by gathering all the necessary ingredients for stir-fried okra with eggs and Mushroom sauce.

2 Rinse and pat the okra dry, then cut off the heads.

3 Cut the okra at a slant, keeping the seeds inside the pods; there's no need to remove them.

4 Heat cooking oil in a pan over medium-high heat. Pour the beaten eggs into the pan and scramble them. Push the scrambled eggs to one side of the pan. Add minced garlic to the empty side and stir until fragrant.

5 Add the okra to the garlic and combine with the eggs, stirring for a few seconds.

6 Add oyster sauce, soy sauce, sugar, and ground pepper. Stir to combine until the sauce coats the okra and eggs evenly.

7 Stir well for just 1-2 minutes until the okra turns greener and becomes softer.

8 Serve with steamed jasmine rice and enjoy!
