This dish makes the perfect vegetarian option, with the mushrooms absorbing the sweet and tasty teriyaki sauce beautifully before being grilled to perfection on a hot pan.
Mushrooms have a unique, umami-rich taste with a firm, chewy texture that pairs beautifully with teriyaki sauce. Originating from Japan, teriyaki sauce has become quite popular in Thailand and we have been incorporating it into our own dishes to add a little twist.
It's essentially a blend of soy sauce, mirin, sugar, ginger, and sesame oil, creating the perfect match for grilled mushrooms. With this recipe, you can enjoy it as an appetizer, a little snack, or a side dish together with steamed rice that balance out the tasty teriyaki sauce.

- ½ cup chopped spring onion
- 2 tablespoons teriyaki sauce
- 3 tablespoons water
- 1 tablespoon sugar

1 Start by gathering all the essential ingredients needed for the grilled teriyaki mushrooms.
2 Mix the teriyaki sauce, water, and sugar together, stirring until the sugar is fully dissolved.
3 Separate the Enoki mushrooms gently, keeping them attached at the base to form small bundles.
4 Heat a pan over medium-high heat, add a bit of cooking oil, and carefully place the mushrooms in the pan.
5 Pour the prepared sauce over the mushrooms in the pan.
6 Wait until the sauce is nearly evaporated, then flip the mushrooms to grill the other side.
7 Add the chopped spring onions, remove the pan from the heat, and gently flip the mushrooms to combine everything.
8 Serve hot and enjoy!
