Sweet Corn and Coconut Flesh in Butter is a delicious Thai street food dessert that you can find at any night market or in malls across Thailand. It's one of my favorite summer treats that you can enjoy at any time of the day. Children, especially, love this.
This recipe is very easy and is made from boiled fresh sweet corn on the cob. Once the corn is cooked, remove the kernels and place them in a steamer. Then, scoop the corn into a bowl and mix it with butter, salt, evaporated milk, sugar, and a pinch of salt.
Finally, top it with young coconut milk. Easy peasy! The hard part is going to be removing the corn from the cob. I've discovered several methods that will allow you to easily do this.
The simplest one involves boiling fresh sweet corn until cooked, then removing it from the boiled water and draining it well. Place the corn cob on a cutting board, hold it steady, and slice off the bright yellow kernels downward, strip by strip. That's it.
I've also found another method for removing corn kernels that doesn't involve using a knife, preserving the shape of the kernels after they are taken off the cob.
After boiling the corn until it's cooked, break the corn into two pieces. Use scissors to drill a hole in the middle of the corn cob, then twist the scissors until the corn is separated into two pieces. Simply use your hands to remove the kernels from the cob, and you'll observe the result of the kernels maintaining their beautiful shape. That is it!
I found the latter method to be the cleanest way to remove corn from its cob, which is what we will be doing in this recipe. Now, let’s get cooking!
